Wildhawk announces new bar management team


Wildhawk, the lively bar located in the Mission District of San Francisco operated by local hotel management company The PlumpJack Group, is pleased to announce the promotions of Christian “Suzu” Suzuki-Orellana to Bar Manager and Marguerite Regan as bar supervisor. Suzu enters the new role of the Wildhawk team with 18 years of industry experience at well-known restaurants and cocktail bars in San Francisco, and was a National Finalist for Bombay’s Most Imaginative Bartender Competition. Suzu will bring his distinctive perspective, creativity and personality to the Wildhawk beverage program that he has perfected throughout his life and career. He comes from a legacy of hospitality industry professionals and grew up in his grandparents’ successful restaurants in Japan that opened in the 1940s after World War II. This environment gave him his first courses in hospitality, management and catering under their supervision. His professional career began at North Beach 15 Romolo underground bar as a cocktail waiter, then rose through the ranks to become a manager and later a bartender. Prior to becoming a bartender at Wildhawk in 2018, he held positions at other notable establishments in San Francisco including Tradition and Benjamin Cooper. During the pandemic, Suzu focused her efforts on teaching online cocktail classes that quickly gained popularity. He also started an exciting project called Kagano Bar, a bar-based pop-up that his grandparents ran in Japan in the 1950s and 1960s. The concept focuses on Japanese-centric ingredients while collaborating and developing supporting communities and hospitality workers who identify as POC, LGBTQ +, people of all gender and immigration status, and those with physical and developmental conditions, through events and fundraising of funds. Her extensive experience in city bars and her generational heritage in the industry uniquely positions Suzu to succeed as a leader at Wildhawk.

Marguerite Regan has been in the hospitality industry since the age of 15. Its beginnings were spent in a childhood home from the Prohibition era with an antique bar in the basement located in Dearborn, Michigan. After being introduced to the TV show “Cheers” at a young age, she and her sister often played “bartender”. Regan’s interest continued into adulthood as she was guided by her true passion to be a bartender. She held positions with Drexl in Oakland and Rye in San Francisco, before being hired as part of the opening team of bartenders at Wildhawk. During her career, Regan has participated in several bar competitions, including the Tullamore DEW Bar Stories competition which she won in 2015. As a bar supervisor at Wildhawk, Regan will manage all bar operations; promotions and bar events; and boost sales.

Wildhawk is run by a team of seasoned bartenders who embrace the art of hospitality as much as the art of making a great cocktail. The menu offers cheeky cocktails with personality, as well as beer, wine, and bar snacks to accompany the libations. The bar will continue to offer a wide range of classic Wildhawk cocktails with new menu updates in the works. Each month the bar celebrates friends in the industry and invites them to share their favorite martini in its My Martini section.

The name Wildhawk was inspired by a European expat with a firecracker character named Lola Montez who was often referred to as “Wildhawk”. Its namesake lives in the neighborhood bar on the corner of 19th and Lexington in the Mission district of San Francisco.
